RPM packaging Question

Hello Everyone 
I will soon be undertaking a red hat course and learning about "yum" package manager and the "rpm" package format, im used to arch based distros and using pacman, my wish is to learn how to "make" packages for redhat that i would like and are available from the AUR such as plex home theatre, mpv, compiz just to name a few.

My assumptions so far are that even though it probably is possible to build them i would have to update them manually myself if they are not in the repos or if there is no third party repo to pull from any advice, opinions, thoughts etc would be highly appreciated

Thinking of trying to create an RPM package makes me remember harrowing times when I actually used RPM based distros.
